  Justafoodie P.S. When you buy dried porcini, look for the lightest color you can find. The dark ones have been oxidized and have lost much of their flavor. Over the Internet, Buon Italia in NYC has the freshest I have seen so far. Always refrigerate then to maintain freshness.

  Justafoodie I need at least 3 months. I must have 40 recipes to post and 100 restaurants to review. My travel blog has at least 10 countries to cover and if I don't get this done soon I'll forget too much information. Luckily I have written travel diaries with a lot of the details, and my recipes are photographed showing amounts (I shoot ingredients in measuring cups so I'll remember), but with the restaurant reviews, sometimes I don't even remember what it was or how it tasted, so I can't do the review at all. :-(
