    Don't buy them when they are dark, since that meand they have oxidized and are less flavorful. Look for the lightest color possible.

      Wicked Sheila Oh I am proud, indeed. But everyone should be proud of their heritage, whatever it is. It's part of who you are. And in my case it's great to grow up between 2 cultures. I have no idea how it's like just to be 'plain Dutch'. Not only about dishes, but Indonesian have so many different habits (foodwise) than the Dutch. We eat all day and love to share. Dutch are different :)

      Justafoodie I prefer to use the fresh or frozen, but the dried are more easily available.

      Justafoodie If you decide to buy some dried porcini look for the lightest color you can find. They turn dark when they are oxidizing and lose flavor, therefore the best flavor is from the very light colored porcini.

    The pickling is light enough that you could use these in recipes for sauce, not just as an antipasti.
