Spotted November 20, 2011Good, but instead of a crust built up by long cooking, this rendition had cubed bread sprinkled on top of the beans. I've seen it done with breadcrumbs before, but these cubes tasted like a commercial stuffing mix with sage or poultry seasoning, so it is non traditional.

Spotted November 14, 2011The sausage is specific to Toulouse France, but the cassoulet itself is found all over the region. The perfect rendition has a crusty top from long baking.
