Tried something different tonight. Rather than firing up the grill for my aged New York Strip steak that I purchased from the local Farmer's Market, I seared it on a smoking hot cast iron skillet and then threw it under the broiler. Once cooked to perfection let it rest wrapped in foil and then added shallots, red wine, Dijon mustard, some fresh chopped herbs from the garden and of course some garlic to the skillet and reduced it into the most amazing steak sauce. It was yummy! Better than any overpriced steak I've had from Ruth's Chris Steak House, that's for sure!
