The pickled onion is the cherry on top of these fabulously creamy, smoky bites.

I was concerned the smoked trout would be mashed in with the yolk & taste like anchovies. Neither was true. The fish added a palatable smoky flavor & made the dish feel more substantial than just eating eggs.

Amy Cao @Emily, I was having brunch at Cookshop when I realized the six people I was with DO NOT care for deviled eggs. (Now I'm on a mission to find my true friends.) So excited you're gonna participate! Let me know if I'm missing any on the list.

Emily C. @Amy the ones at the new Seersucker in Cobble Hill are pretty fantastic. Of course, the tempured soft-boiled delights at No. 7 in Ft. Greene don't *technically* count, as a lover of eggs, you should have them. They are brunch only now.
