Last week, Foodspotting was invited to celebrate the launch of our friends Kanon Organic Vodka in Atlanta with an intimate cocktail pairing dinner at The Goat Farm, a mid-Victorian industrial site turned visual and performing arts center with an attractive ramshackle aesthetic that wouldn't be out of place in parts of Brooklyn.

While we've enjoyed Kanon on previous occasions, it was a treat to try the wheat vodka from Sweden in various imaginative cocktails, like a hot toddy-inspired Night's Bloom comprised of vodka, ginger, mint, honey, lime and water, and paired with a four-course dinner created by Atlanta newcomer The Lawrence.

Kanon's US president Peter Wijk was on hand to toast to the occasion, explaining how Kanon vodka appeals to the 'modern, conscious consumer' with an emphasis on the mindful vodka drinker — those who care about the makeup of what they consume and the heritage of a product. The company's slow-but-steady expansion into new U.S. markets align with this mission to reach the quality seeker, rather than quantity seeker, he said.

Whether or not you're the kind to mull over spirit choices at the bar, we were pleasantly surprised to find merit in the vodka beyond it's lack of 'burn' — a cardamom-tinctured Kanon cocktail made with absinthe complemented a sweet corn and lobster dish while the addition of smoke and orange peel made another vodka taste almost like bourbon.
