    To say that Ichiran takes ramen seriously is the understatement of a lifetime. This place is totally insane about ramen. Then take it so seriously that you are corralled into a stall where there is no talking, and nothing to do but wait at and then gaze at your incredible ramen. No distractions - it's all about concentrating on this gem from the Kushu area of Japan, and damn is it tasty. I wept. This is so by far and away the best ramen I ever had. When I get back to Tokyo, ichiran is at the top of my list of places to go to again.

    Chewy, wheat noodles, crispy cucumbers, ground pork and a sesame/peanut sauce - all mixed fresh at your table. I'd heard that this was the real deal and I am converted. This is a fantastic cold-dish pairing to any one of the blazingly hot main courses at Classic Sichuan - and the portion size is enough for three!

  • Spicy Sichuan Fish @ Jialinglou Chanzui Cheng

    "Spicy" does not even approach the kind of spicy we're talking about here. The mix of mouth-numbing szechuan peppercorns plus the dried, flaming hot chiles which are beyond abundant in this oily soup are create a kind of taste-explosion I've never experienced. To be honest, I was in a bit of stomach pain later that night, but you get over stuff like that. Now, this dish does actually have lots of flavor too - and you can see from the close-up all of the mushrooms that rest at the bottom of the bowl, and they are quite tasty too. The fish is of course, bone-in and the bones are little, so you have to be careful not to swallow them. This dish is so spicy that your beer takes on an entirely different, sweet taste as well. I love Chinese food in China!
