Fernando Medrano / Chinese Food

Make no mistake. It is an authentic Cantonese dish. Sea Harbour makes one of the best renditions in the city. Not at all like the foodcourt Chinese you are used to.

Skin so thin you can see the broth line very clearly. Very nice clean tasting broth and a very nice light meatball. New entry into the XLB scene in Richmond, BC.

Alexa Andrzejewski Mmmm those look so chewy and good! Do you think the skin should be think or thick and chewy?

Fernando Medrano I think there are at least two distinct styles - the more popular thin-skinned variety and the more rustic thick skinned variety. My general preference is to the thin skinned XLB (as popularized by Din Tai Fung, etc) which also tend to have light-flavoured broth and meatballs. I have had very good thick skinned XLB - typically a more rustic preparation with more flavourful broth and meatballs (often flavoured with Chinese cured hams, and other rich aromatics). What I don't like is when an XLB maker attempts a thin-skinned variant and ends up with a deflated, broth-deprived, dense-meatballed thick-skinned XLB. The one above has a thin skin (but not nearly as thin as the best places in town).

One of the best in town. Look at that thin skin. Delicately flavoured broth and nice tender meat ball.

Poor, deflated, XLB from an otherwise very good Dim Sum restaurant in Richmond, BC.

Decent XLB. Northern Delicacy is one of the restaurants at Aberdeen Mall. They have a very good smoked duck.

Nice XLB from The Place - Lin's former restuarant. Lin's makes one of the best XLB's in the city.

One of the Best - if not the best XLB in the Greater Vancouver Area.
