    fried chicken at Dante's Fried Chicken

    Ride or Fry's a just-launched street wagon doling out Caribbean-fusion soul food, from a guy who cheffed around Seattle and San Fran before deciding to launch a business based on cooking with his grandma, then proceeded to do pop-ups in NYC and at music festivals all over the world, serving up artists like Rusko and MIA, who surprisingly actually showed up. The trucks grub centerpiece is the chicken: first soaked in kosher salt water, then in lemon rind, buttermilk, tea, and spices for a day, then crispied up in peanut oil and served a la carte or with your choice of pumpkin grits, cheese "mac up" or cucumber corn ginger salad, which is tossed, then kicked, at least at AE Wright. They've also got yam banana catfish, as well as tacos stuffed w/ blueberry Guinness brisket, which's pit-smoked, also a majorly inefficient way to inhale a cigarette.     Rajas fries at Frysmith truck

    Frysmith's a gourmet food truck (powered by vegetable oil!) dedicated to making full french fry'd meals by topping those taters with a mess of ingredients that normally sit next to the fries on the plate, being like, "why are you always so salty!!?". Each dish starts with a base of hand-cut, canola-oil fried Kennebec potatoes (or sweet potatoes), with a main menu composed of 5 totally diet-kidney-punching dishes: Chili Cheese Fries (w/ Angus chili made with beer and chocolate & melted cheddar), Rajas Fries (shawarma-marinated steak w/ poblano chilis, caramelized onions, and Jack cheese), Kimchi Fries (w/ Kurobuta pork belly, onions, and cheddar), Chicken Sweet Potato fries (w/ a tomatillo-tamarind sauce and topped with cashews), as well as fries topped with vegan chili -- ok, so really only 4 choices.     Pork Dumplings at Dim Sum Truck in Los Angeles, California

    From the Dim Sum Truck dudes comes this new rolling mecca of pasta-wrapped deliciousness, w/ crazily Americanized options like a baked potato job (stuffed w/ taters, bacon, chives, and cheddar, and served with sour cream sauce) and a cheeseburger number (w/ grilled onions, American cheese, and ketchup).     Spicy Chicken Tacos at Komodo Food Truck

    Komodo's a mobile operation from the Hotel Bel-Air's former grill chef peddling monstrous flour tortillas stuffed with a multicultural assortment of deliciousness, all served out of a rolling wagon identifiable by its massive black-and-white Komodo dragon, which isn't nearly as demurely lethal as the kimono dragon. Glorious heartiness includes requisite Korean-based stuffings (rib eye/chicken/spicy shrimp) as well as more traditional carne asada and fresh guac "Komodo Signature" and a smattering of American offerings, including the breakfast-esque Early Bird (egg, cheddar, scallions, bacon, sausage, shiitake mushrooms), a Cobb Salad 'rito, and the "Fish and Grapes", and what that contains is anybody's guess.     Bacos at Lardon Gourmet Truck

    Lardon's a rolling wagon dedicated solely to dishes made from deliciously sizzly porkiness, all from a married LA couple obsessed with pig, which is better than being obsessed with Big, though to be fair Billy Kopecki is pretty hilarious. Glorious greasiness includes everything from upgraded basics like a BLT w/ Nueske's peppered bacon, butter lettuce, heirloom tomatoes, and St. Agur Blue Cheese on a baguette, to more-complicated dishes like a Frisee et Lardon sandwich w/ fried egg and bacon-fat vinaigrette on brioche, to insanity like the baco: a taco stuffed w/ potatoes and cheese w/ woven bacon replacing the usual tortilla, served w/ horseradish sour cream topped with pork, just to remind you that this isn't a horseradish sour cream truck, silly.
