    Braised Pork Shank at Silver in Park City, Utah

    One of the more popular menu items we are offering this winter is the braised pork shank. We've sourced a great farm that raises black Berkshire pigs for the shank. They come into the restaurant at approximately 20-21 ounces. We sear them, braise them, then slow braise them for 12-16 hours until the meat falls from the bone. They are served alongside a celeriac and potato puree and a rich tarragon cream. The dish is balanced with a beautiful and bright kalamata olive tapenade. A hearty and decadent dish for the winter.

    Braised Lamb Shank at Apex in Park City, UT

    Braised lamb shank is seasoned with cumin, ros-el hanout, red wine, chicken stock and veal stock. We use Black Barley, sautéed with braising mustard greens, dandelion greens, and Swiss chard. Sautéed rutabaga, green zucchini, and crispy bacon finish off the dish. Sauce is the braising liquid reduced.
