    I don't know if SSC is offered elsewhere in Midland, but the idea of having it where they do tempura so well, and do it for Spider roll seemed too good not to ask. Off the menu, so ask. Mine, today, had more of a hint of "the docks", but it was just the right muskiness to go with that crab fat and fry oil.

  • Sake (Salmon) Nigiri @ Bushido Japanese Steak House

    (It's the salmon-colored pieces at center-top). Salmon is a great starter for sushi newbies, we're usually familiar with smoked salmon or lox. I've kind of "moved on" in favor of other delights, but the salmon here is wonderful, up to Bushido standards. Zero "fishy" taste, 100% deep-sea, cold-river flavor.

    Its the two on the right. Beautiful, buttery, melts in your mouth. Bushido cuts them large, so an extra full mouthful just adds a little challenge and an extra tasting-with-your-while-mouth experience.

    Gotta stop thinking chains suck, by rule, anyway. I'd forgotten FRs does exotics! Beautiful elk burger, lots of flavor in the meat, only an occasional whiff of gaminess, lots of deep muskiness and amped-up beefiness. They'll cook 'em a little pink here, unlike beef burgers anywhere else in town I've found. I had this one with grilled onions, green chiles and Swiss. Side order of chipotle sauce. Awesome. I'll be back to try the venison, buffalo, ostrich.

  • Sushi Nigiri @ Bushido Japanese Steak House

    Huge bites of the deep blue sea. I'm used to taking in my sushi all in one mouthful and these slabs can be a bit much, but it's that much more of an explosion. Always super fresh.

    Cocoa and cheese? Think chocolate in or on cheesecake. I'd never heard of Nabisco's "Famous" Chocolate Wafers, but I stumbled onto them looking for crackers to go with some Emmenthaler at the time, and thought it'd be interesting if not great. It's both. Now I'm trying it with whatever else I try cheese-wise. Vintage Dubliner is excellent, by itself or with the crackers...or are they cookies? The next Oreo?

    Yes, yes! Killer "filler". I wasn't brought rosemary olive oil, but this hardly needs butter. Classically done, for sure, just not sure if this is Italian bread or what.

  • fried crawfish tails @ Wall Street Bar and Grill

    These were huge! Best fried crawfish I've ever had, and I lived in Lafayette for 8 years. Sure I wasn't quite the foodie I am now, but that's where it started. Get it with a plate of crawfish étouffée. I'll be back tomorrow!

    Fabulous. Not hot, if that's what you want, but they serve Tabasco. No, this is the real deal ( as far as I can tell). A beautiful dark roux sauce, complex, earthy, smoky. NOT a red sauce, brown like I remember and love from Lafayette. I always like "half-and-half crawfish", fried tails and étouffée to mix on the plate, and this sauce étouffée is the absolute best for that. Just awesome.
