Never to hot to have ramen. Dipping sauce is a bit complex, rich in flavor plus the smoky umami flavor of the bonito flakes makes it so amazing. I almost forgot about the bouncy perfect ramen noodles.
The subtle medley of flavours and the freshness of the fish, just awesome. The chimichurri gives a nice biting touch to this dish.
Has complexity of flavors from the 12 hour tonkotsu broth, the sesame paste, soy sauce and other ingredients like garlic and black beans. A nice sublime balance of salty, sweet, sour and bitter. Much more subtle than the robust version we are accustomed to with the one in Pasay Road. Finally we can get this at any time during the day when the store is open.
