probably one of my best dish ever. I won a national competition with it here in China. the whole idea was to have the concept of an ocean theme. i did a blueberry reduction for the sea waves, placed the salmon mousse on a pebble stone and added some scrambles egg for lava like. then star anis for star fish and peppercorn for sands. what do you think of it?
