A not-so-sweet pumpkin tart with a grain-free crust filled with clove, cinnamon, and ginger spiced Hokkaido pumpkin with honey wine raisins, lavender-coconut foam, and tiger nut-almond crumble — the cake base was a bit too crusty while the pumpkin itself was well-spiced and had a complex flavour. Could have been even more intense though. Interesting dessert in any case.
Pan-roasted pheasant breast in a pheasant leg ragout with lacto-fermented sunflower, almond, and paprika cheese; grilled sweet potato; and a braised chicory, bacon, coriander, and orange jus — did not try, yet my parents were astonished and delighted by the excellence of the pheasant and variety of flavours on the plate.
A wild-caught herb-crusted pike perch with fennel and celeriac gratin, spinach cream, and raw lemon peel vinaigrette — an excellent fish, well surrounded by complementary vegetables with fitting spices. A great dinner dish.
Oh. So. Wow. If you cannot decide what cake to eat: Just order the cake plate and 4 half pieces of different cakes. Try the carrot cake, New York cheesecake and the marble cake at least — these are among my favourites at least.
