Another great dish on the Chef's tasting menu at Ashley's. Boudain blanc is a star... The boudain is poached and the the skin is crisped up before it is sent out. It comes with pickled chanterelle mushrooms, shaved asparagus and a bacon vinaigrette. Not a heavy dish, and so satisfying.
