Escoffier, 4826: Bombe Ceylan. A chocolate-sprayed "bomb" of rum and coffee ice creams with a chocolate cookie base. Served with brandied cherries, vanilla bean and raspberry sauces. (And it's fun to note that the chocolate is sprayed onto the ice cream with a paint gun!)

Coffee milk gelato on top of a soft chocolate cookies with a cocoa powder shell that's been slightly torched. I had the pleasure of seeing them plate these. :)
