I love Collards especially with salt, and Hot & Spicy Vinegar. These look great, as you only see them in the late summer.

I can only imagine these are 'locally grown'. The museum has some kind of partnership with the Department of Agriculture's farmers market and they have a small garden off the cafeteria for show. I'll take a pic next time I go which will be soon. I want to finish tuskergirl's guide to museum cafes...
