Sea Urchin at René Redzepi in Copenhagen, Denmark

Fresh sea urchin with intensely green dill ice, beautifully white cream ice, and cucumber wrapped in the ashes of its own skin (weird eh?). The whole dish was very fresh tasting, and I particularly loved the dill ice, since dill is my favourite herb!
