Pad Lao is not Pad Thai.. Ha. Definitely cousins though! Freshly made rice noodles, quickly stir fried with egg, minimum if any fish sauce. Garnished with peanuts, cilantro, and fresh dill which seems to be used abundantly in Laotian cuisine. Dishes tends to go to the bitter spectrum of flavor more than sweet, as its southern neighbor does. Familiar dish with a great twist!
