Called "Rabbitfish" in English, this meaty fish comes from mainly from Palawan, Philippines where some of the best diving in the country is found because of coral reefs teeming with fish. Danggit means salted and sun-dried. But this Lamayo version is meatier than the regular dried fish which is usually flat. Quickly fried the fish meat pops & the skin becomes crispy. Served with spicy vinegar with garlic fried rice and sunny side up eggs. My first time to try this version and it definitely won't be my last!
