Truffle explosion - raviolo of truffle jus topped with black truffle - you eat this in one single bite and have the warm truffle jus explode in your mouth. This was the second most truffly dish I have had, only second to the white truffle risotto at Per Se. The raviolo seemed to be a bit thick, but that could be to ensure that it did not prematurely explode over the guest or maybe it was to add a chewy textural element, but I could not help think about how the dish would have been with a thinner skinned raviolo.
