Big Island Farm Raised Sturgeon and "Meatball" with Shiitake Mushroom Puree, Bean Salad, and Sumida Farms Watercress Oil. This was my first encounter with sturgeon. I'm now a fan. Fish is deliciously oil, delicate, and tasty. This dish was featured during Alan Wong's "The Farmer Series Dinner" held on April 28, 2010 featuring Howard Takata, PhD. of Akolea Aquatics
