Tuna Tartare With Wasabi Guacamole And Lotus Chips

With a bit of soy on top! really a tremendous chips-and-dip-esque experience. The lotus chips aren't shatteringly crunchy, they have a bit of give. the wasabi isn't too overpowering. I think the texture is the most dangerous element of this dish---it could easily veer to the mushy or firm extremes---but they mange to display the distinct silkiness of each ingredient together and in contrast. Way too easy to eat, as evidenced by it being on almost every table when I'm there...
