The default tsukemen base is shoyu tonkotsu (pork) and is just PERFECT! The broth is thick an rich like gravy. Last time we got the special Tokyo style tsukemen on the special menu, which I had in Japan but is an acquired taste (it was full of fish powder). Amy you'd like this much more!
