    I know tilapia gets a bad rap oftentimes, but this is really excellent. There's a noticeable freshwater character to the meat, which is quite flaky, and expertly fried, crispy and not at all oily. the skin's really great. as is the norm at Los Sanchez, the beans and rice are great, and more surprisingly, the fries are impeccable. Eat this all with salsa verde, and watch out for bones.

    Bright, bright, bright! The fish themselves were very rich while remaining light and open to the flavors of the brisk pears and the salty Idiazabal cheese. Texturally interesting, using the silkiness of each element (the pears were very minimally grainy) to unify the textures, but contrasting the firmness of the cheese, the meltiness of the fish, and the slight crisp of the pears. Brilliant!

    I wasn't a fan of cooked oysters until I had these. Grilled first while closed, the chef then opens them up and pours on a mixture of soy sauce and sake. What got me was the incredibly fresh taste. These guys were probably fit to be eaten raw! Wonderful range of creamy to firm texture.

    I think this is the best way to eat fried squid. Simple, but more than the sum of its parts. Seasoning is just as it's called---salt and pepper!

  • Oysters @ King's Fishhouse

    The top 4 are Conway Cups, the next 4 (clockwise) are Malaspinas, and the last 4 are Quilcenes. Quilcenes are from Quilcene Bay in Washington, and the rest are Prince Edward Island, I think. The oysters here are always fresh, and I have never had any raw oysters that approach the quality of those served here.

  • Fish and Chips @ Spud Fish

    These are, without a doubt, the best fish and chips on the face of the earth. Crust is crunchy, fish is mild and flaky, and fries are lacy (crispy where they should be crunchy where they should be) and satisfying.
