I dub this cuisine Contemporary New Pennsylvanian (because Deviled Ham & Minced Trotter strikes me as something Pittsburghers would like, but it's executed amazingly well).
I first sampled Deviled Ham Scotch Eggs at the SF Street Food Fest two years ago and have been asking Il Cane Rosso about them ever since. At last, their sister restaurant, Red Dog, opened up in SOMA and serves them every night!
